1 cup toasted buckwheat groats
1 cup shelled edamame beans
2 radishes, finely sliced
1 cup mung bean sprouts
2 Lebanese cucumbers, sliced into ribbons
1 avocado, sliced
¼ cup chilli ‘vegannaise’ (¼ cup vegan mayonnaise, plus ½ teaspoon chilli flakes)
1 cup kimchi
1 sheet nori, cut into thin strips
2 tablespoons toasted sesame seeds
Handful fresh coriander leaves, to serve
Sriracha chilli sauce, to serve (optional)
