Chapter 1: General Cooking Tips
1. Add some zest. When a recipe calls for citrus zest,
it refers to the colored outer section of the skin, not the inside white part known as the pith. The zest contains all of the fragrant citrus oils and gives the recipe a citrus tang. Rubbing the fruit against the tiny holes of a cheese grater is an easy way to get a delicate zest.
2. Don't be frightened to try new things. A good cook will never be hesitant to depart from a recipe and put their own spin. Make a note on the recipe whenever you make a substitution or addition so you remember whether you liked the modification or not the next time you make it.
3. Salted versus unsalted butter. Both salted and unsalted butter are available. The salt is added for flavor and to help preserve it so that it lasts longer. The issue is that the salt in butter might sometimes be more than a recipe requires. Using unsalted butter provides you more control over the amount of salt in your recipe. If you only have salted butter, leave out about 14 teaspoon of salt for 12 cup (one stick) of butter used in the recipe.
4. Make use of your kitchen scissors. You probably only use your kitchen scissors to open packages and milk bags right now. However, the next time you remove fat from a roast, open pitas, or chop chicken into strips, try using your scissors! Chefs constantly use them to cut meat and other food items.
