    INGREDIENTS:

    2 tablespoons of olive oil

    1 medium onion, chopped

    2 garlic cloves, minced

    800g ripe tomatoes, skinned and seeded (you can use fresh or canned tomatoes)

    1 tea spoon of sugar

    1 bay leaf

    Salt and pepper to taste

    Fresh basil leaves (optional)

    Instructions:

    Heat the olive oil in a large pan over medium heat.

    Add the chopped onion to the pan and saute for about 5 minutes, until soft and translucent.

    Add the minced garlic to the pan and saute for another 1 minute, taking care not to burn it.

    Add chopped tomatoes to the pan and stir well.

    Season with sugar, salt and pepper to taste. Add bay leaf.

    Bring the sauce to a boil, then reduce the heat to medium-low. Cover the pan, leaving a small opening for steam to escape.

    Cook the sauce for about 30-40 minutes, stirring occasionally, until the tomatoes break down and the sauce reaches a thicker consistency.

    If you prefer a smoother sauce, you can use an immersion mixer or transfer the sauce to a blender and blend until you get the desired consistency.

    Remove the bay leaf and, if desired, add some fresh basil leaves to enhance the flavor.

    10. Your Classic Tomato Sauce is ready to use! You can use it right away or store it in an airtight container in the fridge for up to a week.
