Grapefruit Americano

25ml Campari
25ml Martini Rosso vermouth
ice
San Pellegrino Pompelmo (grapefruit soda), to top

Add the Campari and vermouth to a glass, add ice, stir gently and top with soda. MAKES 1

Bourbon Smash

60ml bourbon
20ml Simple Sugar Syrup (see recipe below)
4 mint leaves, plus extra sprig to garnish
ice

Put the bourbon, simple syrup, mint leaves and ice in a cocktail shaker and shake until well chilled. Strain into a glass over ice. Garnish with a mint sprig.

MAKES 1

Simple Sugar Syrup

1 cup sugar
1 cup water

Simmer the sugar and water in a small pot over a medium heat until reduced and syrupy. Chill until ready to use. MAKES ABOUT ¾ CUP

Scallops in Crispy Pancetta (gf)

A match made in heaven – crispy bacon, juicy scallops and a sweet/tart dipping sauce.

20 large scallops
sea salt and ground pepper
thinly sliced pancetta, about
½ a slice for each scallop, depending on their size
olive oil, for cooking
Pomegranate and Lime Mayo Dip, to serve (see recipe right)

Season the scallops with salt and pepper. Wrap each one in pancetta
