    1. Potato Patties

    Ingredients:

    For 4-5 persons

    8-10 potatoes boiled

    1 bunch of green coriander chopped

    4 green chillies

    1 1/2 cup assorted dry fruits

    1 cup fine flour

    1 cup breadcrumbs

    1 1/2 teaspoon salt

    1/2 teaspoon red chilli powder oil for frying

    Method:

    Mix coriander, green chillies and all the dry fruits. Skin and grate the potatoes. Mash cottage cheese and add to it salt, red chilli powder and mix well. Form balls of equal size. Fill some dry fruits mixture paste in the balls and flatten them with your palm.

    Mix water and fine flour and prepare a mixture.

    Spread breadcrumbs in a plate. Roll patties in the fine flour mixture, wrap with the bread crumbs and fry crisp.

    Serve hot with sauce or chutney.

    2. Super Samose

    Ingredients:

    For 3-5 persons

    2 cups fine flour

    4 tablespoons oil

    1 cup boiled noodles

    2 eggs beaten

    4-5 mushrooms chopped

    4-5 capsicum chopped

    1 onion chopped

    1 tablespoon vinegar

    1 teaspoon soya sauce

    1 tablespoon oil, 1 1/2 teaspoon salt

    1/2 teaspoon black pepper powder oil for frying

    Method:

    Mix three and salt to a fine flour and knead it with some water. Cut the dough in four portions and cover it with a moist cloth.

    heat a tablespoonful of oil and sauté onion. Add capsicum and mushrooms. Cook sesame tender. Break the eggs and add to it. Mix salt and capsicum and fry well.

    Add noodles and stir well. Pour vinegar and soya sauce on the noodles and stir. Put all the ingredients in a fine sieve and set aside for 20 minutes.

    Roll out each dough ball to a large chappati. Cut with a knife in halves. Fold each half to form a triangular samosa.

    Split the noodles into four portions. Fill one portion each in the samosa laves. Mix a little water to fine flour and make a paste. Seal the edges of the samosas with this paste. Heat oil. Fry samosas and serve hot with chutney or tomato sauce.

    3. Cutlets Burger

    Ingredients:

    For 1-2 persons

    4 potato cutlets

    250-gram cottage cheese

    4 tomato slices thick

    1/2 teaspoon rock salt

    1/2 teaspoon black pepper powder

    1 tablespoon lemon juice

    2 toothpicks

    Method:

    Slice cottage cheese into two thick and large pieces.

    Mix salt and black chilli to the lemon juice and toss cottage cheese pieces in it to absorb the juice and spices.

    Fasten potato cutlets with toothpick, tomato slice, a cottage cheese piece and then again tomato slices and lastly spears the second potato cutlets on the other side.

    Delicious cutlets burger is ready. Serve it with sauce or chutney.

    4. Dhokla Bite

    Ingredients:

    For 3-4 persons

    1 1/2 cups gram flour

    3/4 cup sour curd or whey

    1/4 teaspoon red chilli powder

    1 cup cottage cheese

    1 tablespoon green coriander finely chopped

    1/2 tablespoon green chilli finely chopped

    1 tablespoon crushed almonds and groundnuts

    1/4 teaspoon black mustard seeds

    3-4 curry leaves, 1 tablespoon oil

    1/2 teaspoon edible soda

    Method:

    Mix a teaspoon of salt and red chilli with sour curd or flour and set aside for 3-4 hours. Then, add gram flour and prepare a thick mixture. Cover and set aside for 3-4 hours. Mix soda with the mixture and pour it into a pre-greased bowl and cover it with a plate.

    Pour a little water into it. Steam cook dhokla for 20-25 minutes.

    Take out dhokla from the bowl. Cut into equal pieces as per linking.

    Mix chopped coriander, chilli, salt, groundnuts and almonds in cottage cheese and spread on each piece.

    Fry mustard and curry leaves in oil, season the dhokla bites and serve.

    5. Great Bread Pakore

    Ingredients:

    For 1-2 persons

    4 bread slices large

    2 onions medium sized chopped

    2 tomatoes medium sized chopped

    4 bread slices sized thick cottage cheese slices

    8 cheese slices, 1/2 cup seeds of muskmelon

    1 cup gram flour batter gram flour mixture thick a pinch of king’s cumin a pinch of rock salt powder

    1/2 teaspoon salt, 1/2 teaspoon red chilli powder a pinch of baking powder oil for frying

    Method:

    Heat 1/2 tbsp. of oil and sauté the chopped onion. Add tomatoes. Fry sesame the water dries up.

    Place the bread slices and stack thick cottage cheese slice on them. Spread 1/2 of the cooked spices on the cottage cheese pieces and cover with cheese slices.

    Press another bread slice and prepare the second sandwich and same way. Mix salt, red chilli, king’s cumin and baking powder to the thick gram flour batter and stir well.

    Heat oil. Dip the sandwiches in the mixture and fry well.

    Serve with green coriander chutney or tomato sauce.

    6. Cream Drops

    Ingredients:

    For 2-3 persons

    2 cups curd cottage cheese

    1 teaspoon green coriander and mint chopped

    3-4 green chillies finely chopped

    1 teaspoon chaat masala

    1/2 teaspoon salt

    1/2 teaspoon red chilli powder

    1 1/2 cup breadcrumbs

    1 cup gram flour
