    I have been a yo-yo dieter for most of my life and I learned a lot about how to lose weight and how to gain it. How to keep it off is the trick. Add to that, how to keep it off while still enjoying the foods I love is the challenge. I knew that if I couldn’t find a way to enjoy my favorite foods while still maintaining a very low-carb lifestyle, then I would fail once again to keep the weight under control.

    Bread is always a challenge when you’re trying to keep the carbs down. The sad fact is that the wonderful, gluten-filled flours are not low in starches and carbohydrates. Add real sugar to it and one blueberry muffin can cost you 27 net carbs in your daily plan. And I love muffins. Let’s face it, I love food!

    However, you can have your muffin and eat all of it, too! The basic recipe I use is very versatile and can be easily adapted. I start with microwaving the muffin, then you can either eat it that way or you can cook it a little more to make an even tastier, sturdier muffin bread that will hold up to your toppings or a hamburger. I admit, this began as an Atkins Muffin-in-a-Minute, but I’ve added to it, so it isn’t quite as low-carb as a MIM, but it is more satisfying.

    Besides microwaving, you can also bake these in the oven or a toaster oven. They just take about 15 to 20 minutes or so, depending on the ingredients. In a few places, I’ve included the baking instructions and
