Most of the recipes in this book can be easily made with low carb flours, including almond flour and coconut flour, meaning the carbohydrates in a serving are all under ten effective (net) carbs per serving. Rene Averett blogs regularly on her Skinny Girl Bistro site where she shares information about low carb foods, living a low carb lifestyle and many recipes. She lost 150 pounds in 2010 using the Atkins Diet and is sharing her weight loss recipes via her low carb cookbooks.  Rene hails from El Paso, Texas a good many years ago. She has lived in Los Angeles and Las Vegas and has made her home in Reno, Nevada since 1977. The latter part of her career centered on doing technical writing for a large gaming manufacturer and she enjoyed it right up until her retirement.     Introduction

    I HAVE BEEN A YO-YO dieter for most of my life and I learned a lot about how to lose weight and how to gain it.  How to keep it off is the trick.  Add to that, how to keep it off while still enjoying the foods I love is the real challenge.  I knew that if I couldn’t find a way to enjoy my favorite foods while still maintaining a very low carb lifestyle, then I would fail once again to keep the weight under control. 

    Let’s face it, I love food.  I love sweets.  I love bread.  These are part of what makes life so pleasurable.  Now, I’ve known people who only consider food as fuel, but I savor the flavors.  So keeping flavor in my dining is important to me.  My low carb lifestyle isn’t perfect, but it’s better than most. 

    The truth is that baked products with low carb flours don’t taste like the ones made with wheat flour, white flour, rye flour and cornmeal, but they have  do have a very pleasing flavor that comes close to the real thing.  After a few months of not eating any bread or sweets of any kind, these taste pretty good. 

    This little book is filled with delicious sweets that take you from one season to another without adding too many net carbs to your meal plans.  Granted, some of the servings aren’t large, but take your time and enjoy the flavors and you’ll find that they are satisfying.

    Really, with a low carb diet, the choice of low carb flours and sugar-free products that are available, you really can have your cake and eat it, too.  Because low carb doesn’t have to be boring...

    Now for a bit of a disclaimer.  I use primarily CarbQuick for my baking mix, which is 3 net carbs per 1/4 cup.  I use Almond Flour that is also 3 net carbs per 1/4 cup.  All low carb products are not created equal, so be sure to check the net carb count of the flours, sugars, jams, etc. that you use and adjust the carb counts if needed.  The carb counts will vary slightly based on products used and serving sizes, so while they may be close, they may be a little bit more or less.

    Autumn is one of my favorite times of the year.  The weather is beginning to cool and the days have a bit of a golden glow as the trees begin to change colors and the last of the summer fruits are ripening and coming to market.  Look for pumpkins, pears, quince, apples, figs and many other fruits that mature at this time of year.  Luckily, with year round imports of fruits, many of these are available throughout the year, but sometimes you get caught short on some items.

    Pears aren’t always readily available, so I like to freeze some to use later in the winter and spring.  One year I couldn’t find any canned pumpkin at the store, so I make it a point now to stock extra so I can enjoy it any time.  Same thing with fresh cranberries.  These are only in season in the fall, so I buy several extra packages to freeze.  Quince and persimmons only seem to show up in late October to early November around the Reno, Nevada area, so again, buy and freeze these if you want some later in the year.

    Almond Pear Cheese Torte

    THIS IS AN AMAZING tasting dessert made with fresh pears and cream cheese.  Low carb flours tend to break easily after they are cooked so if that happens, just patch them back together carefully and it will still taste wonderful.

    1/4 cup Butter, softened

    1/2 cup Sugar Substitute

    1/4 cup Low Carb Flour or Baking Mix

    1/4 cup Almond Flour

    1 tablespoons Vanilla Whey Protein Powder (optional, if not using, use 1 more tablespoon of low carb flour)

    4 oz. Cream Cheese, softened

    1   Egg

    1/2 teaspoon Vanilla Extract

    1/4 teaspoon ground Cinnamon

    1/8 teaspoon ground Cloves

    2 small fresh Pears, peeled, sliced

    2 tablespoons Sliced Almonds

    Preheat oven to 425°F.  Prepare a 7 spring form pan (inside is about 6 1/2) by spraying lightly with cooking spray.

    Bring a pan of water to boil.  Cut the pears in half, remove the seeds and slide them into the boiling water.  Remove them after one minute and run cold
