EASY CHICKEN BAKE
SERVES 6–8
• 4 chicken thighs
• 4 chicken drumsticks
• salt
• 4 bay leaves
• 30 ml (2 tbsp) olive oil
• 1 lemon, sliced into wedges
• 100 g Kalamata olives, pitted
• 150 g feta, crumbled coarsely
• 150 g tomatoes on the vine
• a handful of basil leaves
1. Preheat the oven to 200°C.
2. Place the chicken pieces in a roasting tin and season all over with salt. Drizzle olive oil over, scatter lemon wedges and bay leaves over, and cook in the oven for 40 minutes.
3. Remove from the oven and scatter olives and feta cheese over. Add the tomatoes. Return to the oven and cook 15–20 minutes, until the chicken is cooked and golden, and the tomatoes are blistered.
4. Garnish with basil and serve warm.
