1: THE FINEST QUICK AND EASY DELICIOUS COOKIE RECIPESIN THE WORLD
ITALIAN COOKIES
VANILLA BISCOTTI
Yield: 12 cookies
Ingredients:
6 tbsp. salted butter (softened at room temperature)
2 cups all-purpose flour
2/3 cup sugar
2 medium eggs
1/2 teaspoons of salt
1/2 teaspoons of vanilla essence
1/2 teaspoons of baking powder
Directions:
Preheat the oven to 350 degrees Fahrenheit and gently butter a cookie sheet.
Cream the sugar and butter together with an electric mixer until light and creamy; add the salt, vanilla, and baking powder. Stir until completely combined.
Beat in the eggs (don’t worry if the mixture appears curdled; this will dissolve after the flour is added).
Reduce the mixer speed to low and gently add the flour. Continue to stir the batter until it is smooth.
Place the dough on the prepared baking sheet and roll it into a log.
Remove the dough from the oven after 25 minutes. Reduce the heat to 325°F and bake for another 15 minutes.
Cut the dough into 12-inch broad pieces using a serrated knife.
Place the biscotti slices on a baking sheet and bake for 25–30 minutes more.
Cool on a wire rack and store in an airtight container.
