Pecan & apple monkey bread

SERVES 8 PREP + COOK TIME 1 HOUR 15 MINS

3 medium Granny Smith apples (600g)
¼ cup (55g) caster sugar, plus 2 tablespoons extra
1 tablespoon brown sugar, plus ¾ cup (165g) firmly packed extra
1 teaspoon ground cinnamon, plus ½ teaspoon extra
¼ teaspoon ground cloves
1 tablespoon water
½ cup (60g) pecans, roasted, chopped coarsely
3 cups (450g) self-raising flour
40g cold butter, chopped, plus 90g, melted, extra
1¼ cups (310ml) buttermilk
2 teaspoons icing sugar

CARAMEL SAUCE

1 cup (220g) brown sugar, firmly packed
100g butter, chopped
300ml pouring cream

1 Preheat oven to 220°C. Butter, then flour a 22cm kugelhopf bundt cake pan (see tip).
