    Banana Bread

    Preheat the oven at 350 degrees Fahrenheit. Spray the bottom of a nine inch by five inch by three inch loaf pan with a nonstick cooking spray. Beat 5 tablespoons of butter in a large bowl with an electric mixer set at medium speed until light and fluffy. Add 1/2 cups of granulated sugar and 1/2 cups of firmly packed light brown sugar. Beat well. Add 1 large egg, 2 egg whites and 1 tablespoon of vanilla extract. Beat until well blended. Add 1 1/2 cups of very ripe mashed bananas.
