    Easy Breakfast Smoothies Bars

    ⅓ Cup quick cooking oats

    ¾ cup Welch’s 100% Grape Juice

    2 ¼ cups frozen blueberries

    1 cup 2% vanilla Greek yogurt

    ½ cup almond milk

    3 tbsp honey

    Preparation

    Add oats to blender. Pulse until finely chopped. Add grape juice, blueberries, yogurt, almond milk and honey to a blender. Purée until smooth. Pour into 12 (1/3 cup) ice pop molds. Freeze for 4 to 6 hours or until firm. Tip: To easily release pops from molds, dip in warm water before removing.

    Honey Bun Cake

    1 yellow cake mix

    1 cup brown sugar

    2 cups powdered sugar

    3/4 cup oil

    1 Tablespoon cinnamon

    4 Tablespoons milk

    4 eggs

    1 Tablespoon vanilla

    8 oz sour cream

    Mix cake mix, oil, eggs, and sour cream by hand, about 50 strokes. Put half the batter in 9 x 13 pans. Combine brown sugar and cinnamon and spread over entire cake. Spread the rest of the batter on top of this. Use a knife to make swirls in the cake. Bake at 325 degrees for about 40 minutes. Blend powdered sugar, milk and vanilla extract and spread on warm cake.

    Tropical Coconut Granola

    Ingredients

    3 cups old fashioned oatmeal

    ¾ cup slivered almonds

    6 tablespoons honey

    5 tablespoons coconut oil

    6 tablespoons brown sugar

    1 teaspoon vanilla extract

    Pinch of salt

    ½ cup flaked coconut

    ½ cup Greek yogurt covered raisins

    Instructions

    Preheat the oven to 325 degrees F.

    Combine the oats and slivered almonds and set aside.

    In a medium-sized bowl, combine the honey (measure exactly - don't overfill the measuring spoons), coconut oil (measure exactly when it's melted and not in the hardened state), brown sugar (measured lightly packed), vanilla extract, and salt.

    Microwave mixture for 15 seconds and stir until well combined.

    Pour the honey mixture into the oat and almond mixture and stir until well combined.

    Spread the granola evenly onto a parchment lined baking sheet.

    Bake for 20-30 minutes (depending on the heat of your oven) making sure to flip and stir the granola around every 6-8 minutes.

    Remove and allow the granola to harden and set up. (It may be soft and not very granola-like, but it hardens as it dries out so be careful to not over-cook it). Mine generally takes about 22 minutes and the coconut is a light brown color.

    Stir in the flaked coconut and Greek-yogurt covered raisins.

    Yummy Lemon Pie

    Ingredients

    1 9" prepared pie crust

    1 c. sugar

    3½ Tbsp. corn starch

    1 c. milk

    ½ c. freshly squeezed lemon juice (about 3 lemons)

    3 egg yolks, lightly beaten in separate, small bowl

    ¼ c. butter, softened

    Zest of 2 lemons (1 Tbsp.)

    1 c. sour cream

    1 c. heavy whipping cream

    4 Tbsp sugar
