CRANBERRY ORANGE MONKEY BREAD
Makes 10 to 12 servings
Gooey pull-apart bread is ideal when a quickly assembled treat is in order.
⅓ cup granulated sugar
½ teaspoon ground ginger
½ teaspoon kosher salt, divided
¼ teaspoon ground cinnamon
2 (16.3-ounce) cans refrigerated buttermilk biscuits, each biscuit quartered
1 cup fresh or thawed frozen cranberries
½ cup orange marmalade, melted
½ cup unsalted butter
½ cup firmly packed light brown sugar
2 teaspoons vanilla extract
1. Preheat oven to 350°. Spray a 15-cup cast-iron Bundt pan with baking spray with flour.
2. In a large resealable plastic bag, combine granulated sugar, ginger, ¼ teaspoon salt, and cinnamon. Add biscuit pieces to bag; seal and shake well to coat.
3. Layer one-third of biscuits in prepared pan. Sprinkle with half of cranberries; drizzle with half of marmalade. Repeat layers once. Top with remaining biscuits, and gently press down to push mixture into pan’s grooves.
