Crab Croquettes, Cajun-Style

LOCATED DEEP IN Louisiana’s bayou country, Suire’s Grocery & Restaurant is a casual, side-of-the-road Cajun cooking magnet for locals and visitors (see “Cajun Country Cooking”). Inspired by a memorable meal there, I set out to create a home version of fried crab croquettes in the same crunchy-creamy Spanish style found in the region.
