For the cookies
150g unsalted butter or Stork
150g light brown sugar
50g granulated sugar
1 large free-range egg
1tsp vanilla extract
275g plain flour
1tsp baking powder
1tsp bicarbonate of soda
1tsp cornflour
150g white chocolate chips
75g sprinkles
1 Line a baking tray with baking parchment or a Tupperware container and set aside.
2 In a bowl, cream together the butter and both sugars until pale in colour and fluffy.
3 Add the egg, vanilla, flour, baking powder, bicarbonate of soda and cornflour and mix until completely combined and a dough begins to form.
4 Add the chocolate chips and sprinkles and mix again until evenly distributed.
5 Weigh the cookie dough into balls of around 130-140g and place on your baking tray or in the container. Pop them into the freezer for 1 hour.
6 Towards the end of the 1 hour freezing time, preheat the oven to 200°C/Gas Mark 6.
