Gooey chocolate cherry cookies

If you like American-style cookies, you'll love these chewy delights. Swap the cherries for sour cherries, nuts or even more chocolate, if you like.

■ Makes 20 large cookies ■ Prep 15 mins ■ Cook 12-14 mins

VEGETARIAN FREEZABLE uncooked dough

200g unsalted butter, at room temperature
 85g light muscovado sugar
 85g golden caster sugar
 1 egg
 225g self-raising flour
 50g plain chocolate, 50-70% cocoa, roughly chopped
 50g white chocolate, roughly chopped
 85g natural colour glacé cherries, roughly chopped

Heat the oven to 190C/170C fan/gas 5. Line 2 baking sheets with baking parchment. Beat the butter, sugars and egg in a large bowl until smooth. Mix in the flour, plain and white chocolates, cherry pieces and ½ tsp salt. Spoon onto the sheets in large, rough blobs. Make sure they're well
