    TOFU SCRAMBLE

    Prep/cooking time: 30 minutes

    INGREDIENTS

    1.     1 tablespoon of olive oil.

    2.     1 sliced onion.

    3.     1 large and crushed garlic clove.

    4.     1/2 teaspoon of turmeric.

    5.     1 teaspoon of ground cumin.

    6.     1/2 teaspoon of sweet smoked paprika.

    7.     280g of extra firm tofu.

    8.     100g of sliced cherry tomatoes.

    9.     1/2 bunch parsley, chopped.

    INSTRUCTIONS

    1.     Place a skillet pan over medium heat, add in the oil then let it heat up for a few minutes. Once the oil is hot, add in the onion and cook for about eight to ten minutes until it becomes golden brown in color. Add in the garlic, turmeric, cumin and paprika, stir properly to combine then cook for about one minute. Make sure the tofu is well drained, you can do this by placing a heavy object on it then let it stand for a few hours.

    2.     Use a fork to mash the tofu then add to the skillet pan. Cook the tofu for about three minutes, add in the sliced
