SMART SNACKS

FOR STRENGTH AND MUSCLE GAIN

CHICKEN AND CHIA MEATBALLS

MAKES 24 (2–3 PER SNACK) PREP TIME 15 MINS COOK TIME 15 MINS

20g black chia seeds
500g minced chicken
1 tbs minced ginger
½ onion, coarsely grated
100g coarsely grated zucchini
Small handful of coriander, coarsely chopped
½ tsp salt
Pepper, to taste
40g sesame seeds
1 tbs olive oil
70g Greek-style yoghurt
Large lettuce leaves, for serving

1. Preheat the oven to 180°C. Line a baking tray with baking paper and then set aside for later.

Combine the chia seeds with 60ml water in a bowl, stir and set aside for about 10 mins, or until the water is absorbed
