    Introduction

    Whether it’s in an effort to lose weight or because you’re one of the relatively small number of people who are allergic to it, you’re not alone if you’re avoiding wheat in your diet. Keep in mind that a wheat allergy and a gluten allergy are two different things – people who have a gluten allergy will still find many recipes in this cookbook which they can prepare and enjoy as written, but others which contain other grains, such as rye, which contain this protein.

    This book is written, first and foremost for those people who are either allergic to wheat or who would like to cut it out of their diet in order to help them with their efforts to lose weight. There are a growing number of people who have found that giving up wheat and products which contain wheat-derived ingredients has resulted in weight loss.

    There are a few reasons for this. One is that it is thought that consuming wheat promotes water retention and eliminating wheat from your diet allows you to shed excess water weight; it may not be the same thing as burning off fat permanently, but if you’re trying to kick start a weight loss program, giving up wheat can be very helpful.

    However, this doesn’t mean that longer term weight loss through taking wheat out of the picture isn’t possible as well. There is another reason that people tend to lose weight when they give up wheat: it prevents them from eating a variety of foods, many of which aren’t particularly healthy. A lot of the unhealthy processed foods which are common in the standard western diet contain wheat – take white bread, heavily sweetened breakfast cereals, takeout and frozen pizza, for starters. When you give up wheat, you’re also giving up these unhealthy foods and that can also help you to lose weight.
