Long-weekend LUXE

APPLE & BRIE TART

PREP + COOK TIME 1 hour 45 mins + chilling SERVES 8

 2 medium red apples, unpeeled
 1 tablespoon olive oil
 300g brie
 400g ricotta
 1 tablespoon fresh thyme leaves
 1 egg
 2 teaspoons wholegrain mustard
 ¼ cup grapefruit or lime marmalade, warmed
 8 sprigs fresh thyme

SOUR CREAM PASTRY

 1⅔ cups plain flour
 80g cold butter, chopped
 ½ cup sour cream
 1 egg yolk

1 Make Sour Cream Pastry (see right).

2 Oil a 24cm-round loose-based tart tin. Roll pastry between sheets of lightly floured baking paper until large enough to line tin. Ease pastry into tin, press into base and side; trim edge. Freeze for 15 minutes.

3 Preheat oven to 180°C.
