265g (1¾ cups) plain flour
2 tsp (7g sachet) dried geast
¼ tsp caster sugar
Pinch of table salt
160ml (⅔ cup) warm water
2 tbs extra virgin olive oil
60ml (¼ cup) pizza sauce
130g (1¼ cups) grated mozzarella
12 fresh basil leaves, plus extra, to serve
250g cherry tomatoes, halved

1 Preheat oven to 200°C/180°C fan forced. Grease 12 x 80ml (⅓ cup) muffin pans.
