Rita Johnson
Rita Johnson is a retired Accountant who resides in the Midwest. Born in Jamaica, and one of 10 children, she revered her mom. As a child, she lived on a farm where her and her siblings helped to tend to the animals prior to going to school. Rita knew at a very young age that she would divorce the farm life in search for something else. In school, her subject that she excelled in was math; therefore, it was no surprise when she decided to major in Accounting. Although accounting was her profession, cooking was her passion. Growing up she watched her mom make all the authentic Jamaican dishes and was fascinated with the way her mom could make a four-course meal out of barely anything. Over the years Rita’s home was the home that everyone celebrated the holidays because one thing was for sure and that was the meal would be delicious. Now at age 70, Rita has decided to put those delicious recipes in her first cookbook.

Dedication
This book is dedicated to my mother, the Jamaican queen of our family, E. A. Hislop. I am grateful to you for the love you have bestowed on us and the wonderful meals you provided for us when you were here. Now I am able to put these authentic recipes in this book. May God’s blessing continue to be with you. You were and always will be, a wonderful mother who placed the needs of your children before your own. You were always there with a listening ear and a kind word when we needed it the most. You were our treasure and we all miss you very much; life has not been the same without you. My beautiful Jamaican queen you are extremely missed. I pray that this book will honor you.
Thank you Mama! I love you.
And to my children, for their inspiration and effort towards bringing this book to fruition.
Foreword
Writing this book gave me an opportunity to share my passion for meal preparation and taste that pierces the souls of all who partake. Over my years on this earth I have learned that while the eyes are the window to the soul, a succulent meal is the current that energizes the body that houses the soul.
It is my absolute pleasure to share these recipes with all my friends who love to cook, eat and enjoy their families. In each meal you will notice the difference between my cookbook and other cookbooks, in that the meals are made with organic seasonings, the desserts are made with no imitation flavoring; therefore, every bite will leave you savoring the taste. My favorites are highlighted with pictures; however, each meal promises a wonderful conversation and an evening, day, or morning of reminiscence.
The art of making a tasty meal is a talent based in creativity that I attribute to my creator God. Like most I feel compel to share my talents with all who are interested. Ten percent of the proceeds of this book will be donated to St. Jude.
It is an honor and a privilege to be a part of your conversation.
God’s blessings and good meal!
Brief History on Jamaican Foods
