Born in Highland Park, II, the author studied art at National Park College in Maryland, drama at the University of Texas in Austin, TX. and Interior Design at St. Mary’s University in San Antonio, TX, where she received her degree. Growing up as a brat, her Father being an Army BG, she traveled widely. Viki Fairchild lives in Chickamauga, GA, where the South still fight the Civil War. Governor Harris made her an honorary Admiral of the GA navy. Formerly a model and dancing teacher, she is a member of Mensa and a Life Master Bridge player. She has a son, Jeff who is a builder in Naples, FL. Proceeds from this book will support the Foundation for handicapped American Indian children.

    INTRODUCTION

    Please enjoy a collection of favorite recipes by volunteers and friends. They come from every corner of the world and share the spirit of Naples. Each individual brings a totally unique culinary heritage, whether an exotic ingredient from some faraway place or simply the way Mamma always did it. You will find these recipes easy and time saving and the pages full of helpful hints to enable you to live a long, healthy, and active life. Each recipe has been tested for accuracy and excellence. Not all are original but only favorites are included. Regretfully, many recipes which were submitted could not be included due to similarity or lack of space. Whenever we cook we share the warm companionship of time and food together. Good food shared with good friends is reason enough for a celebration.

    BEFORES

    CAN BE SERVED ANY TIME WITH ANY KIND OF CRACKER… BREAD… CHIP.

    CHICKEN SOUP from the HOUSE OF GEORGE BURNS

    2 lbs. chicken breasts

    5 cups water

    1 Tbsp. salt

    4 celery stalks with leaves

    2 small onions peeled and sliced

    3 whole cloves or

       1 small carrot peeled and sliced

    4 whole peppercorns

    1 Tbsp. fresh parsley, minced

    1/3 cup rice

    1/4 lb. mushrooms, sliced

    1 cup cooked green peas or broccoli spears or raw spinach leaves (cleaned and torn into bite size pieces)

    Place chicken pieces in deep pot with water, salt, celery, onion, cloves, peppercorns and parsley. Cover, simmer 1 hour or until chicken is tender. Remove chicken, strain broth discarding vegetables. Cool chicken slightly and remove meat from bones. Cut into strips. Bring stock to boil. Add rice, chicken strips and mushrooms. Cook 10 minutes longer. Add peas. Cook until vegetables are heated through. Adjust seasoning to taste. Guaranteed to fix what ails you and keep you fit!

    SPLIT PEA SOUP with DUMPLINGS

    Wash and clean split peas. Place in a large saucepan. Crush garlic cloves and boil together gently until softened. Fry bacon slices or melt margarine. Add diced onions and sauté until softened. Add mixture to softened peas and adjust liquid. Season with white pepper and thyme. Add bacon pieces.

    Make dumplings by kneading with cold water to a fairly stiff dough. Let stand a few minutes. Pinch small nuggets of dough and add to soup while still boiling. Dumplings will float. Turn off heat but keep covered. Soup will thicken as it cools. ENJOY!

    SPLIT PEA and BEAN SOUP

    Delicious and nutritious!

    1/2 cup dried split peas

    1/2 cup dried beans, white or black

         (soak beans for 2 hours and drain)

    2 cans chicken broth or vegetable broth

    1/4 cup sliced carrots

    1/4 cup sliced celery

    1 medium red bell pepper, chopped

    2 cloves garlic chopped or

         1 medium onion chopped

    1 tsp. cumin

    1/4 tsp. black pepper

    1 bay leaf

    Rinse and drain split peas. Put all ingredients in a sauce pan. Bring to a boil. Reduce heat and simmer for on hour covered. Remove bay leaf
