    I have been following the Specific Carbohydrate Diet™ since October of 2000. Creating grain and sugar-free desserts has been a hobby. Desserts can be a particular challenge with the SCD Diet because sugar, wheat flour, baking powder, and milk are prohibited. Making desserts without these items was a new experience. It required a lot of trial and error to produce satisfying desserts.

    This book shares some of my favorite SCD dessert recipes that I have refined over my years of being on the diet. Material for this cookbook is based on my website www.scdforlife.com

    Kitchen Essentials

    Parchment Paper

    Parchment paper is a baking lifesaver. The baked goods made with almond flour and honey tend to be sticky. Parchment paper makes cleaning up a breeze and prevents baked goods sticking to the pan.

    Yogurt Maker

    Yogurt is an essential part of the Specific Carbohydrate Diet. While it should be eaten regularly on its own, it also makes great desserts.

    Ice Cream Maker

    Using the 24-hour yogurt (see below) and an ice cream maker, you can create some great ice cream-like treats.

    Baking Cups

    Just like with parchment paper, these keep cupcakes and muffins from sticking to the pan.

    Muffin Pan

    I find that that making cupcakes and muffins is easier than making full-size cakes. Cupcakes cook more evenly than big cakes.

    Cake Pans

    Though cupcakes might be easier to cook, there are times when you are going to want to make a full-size cake. Keep two 8 or 9 inch round pans, one 9 x 13 inch cake pan, and one 8 x 8 inch cake pan on hand.

    Cookie Sheets

    Cookie sheets are perfect for cookies, biscotti, and scones.
