LOW CARB BREAKFAST
Buttery Onion And Mushroom Frittata
A hearty breakfast frittata that you can enjoy with your family.
Servings: 4
Total Time: 1 hour
Ingredients:
1 medium red onion, chopped
1 pound of fresh mushrooms, sliced
3 tablespoons of olive oil
3 tablespoons butter
1 garlic clove, minced
1 shallot, chopped
1/4 cup of shredded Parmesan cheese
1/2 cup of shredded cheddar cheese
8 large Eggs
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons of heavy whipping cream
Directions:
1. Heat butter and oil in a 10-inch skillet on medium heat then sauté onion and mushrooms until softened.
2. Reduce heat to medium-low and cook for 30 minutes with occasional stirring.
3. Add garlic and shallot then cook for 1 minute longer.
4. Reduce heat and sprinkle the Parmesan and cheddar.
5. Whisk the eggs, salt, pepper and cream in a large bowl then pour over top. Cook covered for 5-6 minutes until eggs are almost set.
6. Uncover the skillet, place in broiler for 2 or 3 minutes until eggs are set.
7. Let cool for 5 minutes before cutting into wedges.

1 teaspoon cinnamon

2. Use a fork to whisk the egg and Splenda together. Add the yogurt then whisk again.
3. Stir in the cinnamon, flaxseed and baking powder until properly combined.
4. Pour mixture into ramekin until about half full. Microwave on high setting for 1 minute 30 seconds. Serve hot.

1. Whisk together the milk, eggs, pepper and garlic powder in a large bowl. Stir in the ham.
2. Place a large skillet over medium-high heat then melt the butter in it.
3. Add the egg mixture to the skillet and cook with occasional stirring until nearly set. Stir in the cheese and avocado.
4. Continue cooking and stirring until fully set.
