Chicken with garlic rice

This oven-baked chicken and garlic rice recipe will perfectly fuel you before a big ride, while giving additional flavour to a traditional pre-event meal. Chicken and rice are a classic carbs and protein staple for a wholesome pre-race meal, made tastier with garlic, chicken stock and spices.

INGREDIENTS

SERVES 4

• 5-6 chicken thigh fillets
• 250g white rice
• 1 onion, chopped
• 3 cloves of garlic, sliced
• 2 tablespoons butter
• 500ml chicken stock
• Parsley, thyme or coriander

CHICKEN RUB

• 1• 1 teaspoon thyme• ½ teaspoon garlic powder• ½ teaspoon onion powder• 1 teaspoon salt• Black pepper
