    INTRODUCTION

    Convection ovens have been around since the 1950s and are commonly preferred over the conventional oven.The setbackof the conventional oven is that it has stationary heating elements with no fans to circulate the heat generated. The hot air rises and settles on the surface, so the upper half of the oven would always be hotter than the lower half. If you plan to bake two sheets of cookies in the conventional oven, the cookies placed on the top rack would cook faster than the bottom half; almost a full 30 degrees hotter than the lower.

    A convection oven has heating elements placed at both the top and bottom of the oven and also uses a fan to circulate the air within the oven to equalize the temperature, so no matter where you place the dish or how many dishes you cook at the same time, hot air is circulated continuously. This eliminates cold spots, cooks food evenly, renders fat more quickly, and caramelizes sugar faster among other benefits.

    Benefits Of A Convection Oven

    Here are some reasons the convection oven would make your cooking easier and healthier.

    1. Better Baking: For baked goods, butter releases steam quickly and creates substantial air pockets, this results in flakier, faster and lighter pastries.

    2. Even Roasting: With roasted foods, the fat would render quickly, sealing in those delicious juices and leaving an evenly brown and crispy skin.

    3. Juicier and Flavorful Meals: As a result of the even heat circulation, food on the outside is cooked quickly without drying out flavorful juices on the inside. French Fries and Cookies can now get crunchy on the outside soft on the inside.

    4. Heat Retention: Heat in a convection oven is retained more and the temperature barely reduces irrespective of how many times or how briefly the door is opened and closed.

    5. Rack Placement: There is flexibility in food placement and dishes can be placed anywhere in the oven with guaranteed even cooking.

    6. Energy Efficient: As a result of faster preheating and cooking time, energy used in cooking would be minimal and your oven would be used for shorter amounts of time saving you energy.

    Rack Placement

    Whether or not rack placement in convection oven cooking matters depends on who you ask. In the conventional oven, rack placement was everything and cooking multiple meals without arranging the racks accordingly was detrimental to the output and appearance of the food.

    In a convection oven, rack placement is not as crucial, although there are a few factors where rack placement should be taken into consideration.

    When broiling, the rack should be positioned close to the broiler i.e. at the top position in the oven.

    Racks and baking dishes should be evenly spaced from each other for ideal cooking.This gives the heat more room to circulate and brown food evenly.

    You should use a pan that is more shallow or low sided,because you would want heat to cover over your pastries or cookies more evenly and give it that unique golden brown look.
