Yellow Cauliflower Rice

This wholesome dish inspired by South African yellow rice is delicious served with grilled chicken, salmon or tofu. Turmeric contains high levels of the antioxidant curcumin, which offers outstanding anti-inflammatory, anti-cancerous and anti-ageing properties. Curcumin may also help preserve memory and reduce the risk of Alzheimer’s disease, and can help protect against heart disease.

Serves: 3–4

1½ tsp turmeric powder
½ tsp curry powder
½ tsp ginger powder
1 medium head cauliflower, riced (grated or chopped in a food processor)
2 tbsp olive oil
Pinch sea salt
½ cup sundried raisins
Handful parsley, roughly chopped
¼ cup slivered almonds

1. Preheat your oven to 190°C and line two trays with baking paper.

2. Combine the turmeric, curry powder and ginger in a small bowl.

3. Spread the cauliflower rice onto 2 baking trays, drizzle with a little olive oil and season with sea salt. Sprinkle with turmeric spice mix and toss.

4. Place in the oven for around 15 mins. Give rice a gentle toss after 10 mins.

5. Once the cauliflower rice is cooked, place into a large bowl. Toss through the raisins, parsley and almonds and then serve.
