Summer Accardo, RN is a registered nurse who has a passion for health, wellness and nutrition. She enjoys writing books about how proper nutrition and food preparation methods can enhance optimal health, while boosting immunity. She is the former Director of Nursing Services for a large, 400 bed facility, and enjoys educating students and patients on how to manage chronic disease, pain, anxiety and depression. Summer enjoyed working in critical care units such as coronary care and intensive care, and was always encouraged when her patients made progress and were well enough to transfer to a regular medical floor. She often visited her patients after they transferred off the critical care unit, and was always overjoyed when they remembered her. Cooking raw doesn't have to be complicated, nor does it have to take up a lot of your time. In fact, these delicious and nutrient-dense, raw food recipes were designed with simplicity in mind, and are perfect for the time-strapped, but health-conscious person, who doesn't have a lot of extra time to spend in the kitchen. Your family will love these bold, healthy, and full-of-flavor raw food recipes, just as much as you'll enjoy preparing them!
Before getting started, keep the following points in mind:
1. Thoroughly wash all produce.
2. Whenever possible, use organic produce.
3. Use pure water for your recipes when they call for either soaking or for water.
4. All ingredients need to be raw.
5. Remove all stems and other woody
material from produce, such as those found on apples and figs.
6. Remove hard, large seeds from fruits such as apples, papayas, prunes, dates and citrus fruits.
7. Peel only what absolutely needs to be peeled from fruits and vegetables. This includes peeling avocados, bananas, papayas and jicama. Also, peel produce with any wax on the peel. Otherwise, the peel should stay on, especially for apples, carrots and for cucumbers that are not waxed.
Getting Your Protein
Although meat, dairy produces and eggs are recognized as excellent sources of protein, they are not the only sources. Protein is also abundant in certain plant-based foods, and some of these plant-based foods even contain richer sources of protein than animal-origin based foods.
