    The Instant Pot: What it is and Tips, Tricks and Advice for Using It

    When you first set up your Instant Pot it can be easy to become a little intimidated by it. After all, it is basically a wonder machine that performs just about every kitchen function (except for cleaning up the dishes afterwards). The truth is that the Instant Pot is a relatively simple appliance to use, especially if you have experience with other pressure cookers. Although the Instant Pot has many functions, the recipes in this book focus mostly on using it as a simple pressure cooker.

    When you look at your Instant Pot, you will notice three main parts: the base, the body and the lid. If you are anything like me, you won’t be able to keep your eyes and hands off all the buttons, but for now let’s just focus on these three parts.

    The base of the cooker is where you will select your cooking options. This is where you will set the pressure and the cooking time. Here is a brief rundown of the options you will notice on the base of your cooker.

    Manual: This is the main function button that you will use. This button assumes that you are using the Instant Pot as a pressure cooker. All you need to do is press this button and then use the + / - buttons to adjust the amount of cooking time.

    + and - : These buttons adjust the time that the pressure cooker is set for. (See above)

    Sauté: This button is used quite frequently at the beginning of recipes. It heats the base of the cooker so that you can do open-lid cooking. This is great for softening vegetables and precooking some ingredients. It is also useful to use after the pressure cooking is complete and you need to simmer or reduce a sauce.

    Pressure: This option lets you select the degree of pressure that you would like to use. Most recipes in this book use high pressure.

    Steam: This is a specialized function of the cooker that works great for some dishes. Use the + / - buttons to adjust the amount of time that steam is used.

    Cancel: This button does exactly what it says it will, which is handy for all the times you will accidentally hit the wrong button. This function also keeps your food warm if it needs to sit awhile.

    Specialized Cooking Functions: Your cooker includes options to cook soup, rice, yogurt, meat, poultry and beans. We don’t use these very much in this book. Check your user’s manual for specific instructions on these function buttons.

    The next part of the Instant Pot to look at is the body of the cooker. This is the part where you will put the food. You will notice that there is a minimum and maximum level for your cooker to be filled. It is very important to follow these guidelines. Not doing so could result in food that is improperly cooked.

    Your cooker also should come with a steamer basket. This feature is useful not only for steaming, but also for baking dishes, such as those that hold cake. When using the steam function, make sure to put at least one cup of water in the bottom of the Instant Pot.

    Finally, we have the lid. The lid is a pretty simple piece of equipment. You will notice that the lid has a valve on it. When you are cooking, the valve should be sealed unless otherwise stated. You can open the valve after cooking to reduce the steam. There is a quick release method that takes about 5-7 minutes, as well as a natural release, which just means letting the pressure come down on its own, which takes between 15-20 minutes. Follow recipe instructions for which one to use.

    That is really it as far as the basics go for using the Instant Pot. However, this book would not be complete without some practical tips and advice to help you out along the way.

    Tips and Advice:

    First, give yourself some time to get accustomed to your Instant Pot. This is an exciting piece of equipment and you might want to try it all out at once. Take my advice and take it slow. If this is your first time using a pressure cooker, start with a simple, quick recipe such as a basic vegetable recipe and then work your way up slowly to more complex dishes. Read this book and look at the recipes, but research others too. Check out some of the forums for Instant Pot users and gather helpful advice from the pros.

    The Instant Pot is a pressure cooker, but it is also slightly different from other pressure cookers. It operates at a marginally lower level of pressure. The Instant
