Somewhere along the line, deciding what to eat became a whole lot more complicated than it ever needed to be. The simplicity of eating well, of appreciating and sharing the joys and pleasures of food has been forgotten. In the Western world, we are now faced with the two extremes of obviously unhealthy yet highly convenient fast food versus artificially improved
health food.
The United Nations recently declared that, for the first time in history, over-nutrition
(a less-contentious way to refer to obesity and weight problems) is more of a problem globally than under-nutrition—with the United States leading by example.
