In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until they turn golden and fragrant.
Add the chopped tomatoes, carrots, potatoes, and zucchini to the pot. Cook for about 5 minutes, stirring occasionally.
Pour in the fish or vegetable broth, then add the bay leaf, paprika, and crushed red pepper flakes. Season with salt and pepper to taste. Bring the soup to a boil.
Reduce the heat to low, cover the pot, and let the soup simmer gently for about 15 minutes until the vegetables are tender.
Carefully add the fish chunks
