    Carrot and ginger soup

    Here is the complete recipe for carrot and ginger soup:

    Ingredients :

    500 g carrots, peeled and cut into rounds

    1 onion, chopped

    2 garlic cloves, minced

    1 piece of fresh ginger (about 2 cm), peeled and grated

    1.5 liters of vegetable stock

    Salt and pepper, to taste

    Fresh cilantro, chopped to garnish (optional)

    Instructions :

    In a large saucepan, heat some olive oil and sauté the onion, garlic and ginger until soft and fragrant.

    Add the carrots and sauté them for a few minutes, stirring regularly.

    Pour the vegetable broth into the saucepan and bring to a boil. Lower the heat and simmer for about 20 minutes or until the carrots are tender.
