Meals in 20 minutes

Meal planning doesn’t always work. In a busy life there will be times when you don’t always remember to get all the ingredients you need for the recipe you planned. Then again, there might be moments when friends drop in or you get distracted by the kids or work, and suddenly you find yourself in need of a meal in short order. For those unplanned meal moments, here are some dishes you can have ready in 20 minutes that will please everyone: leek, capsicum and feta omelette; rainbow noodle salad; tomato pasta with olives and baby spinach; linguine vongole; vegetarian nasi goreng; pappardelle with garlic mushrooms; or a kale and blood orange salad.

Leek, Capsicum & Feta Omelette

This delicious leek, capsicum and feta omelette is a quick and healthy meal! If you want to make it easier still, cook it in one large pan, finish it under the grill, slice into four pieces and serve as a frittata.

Serves: 4

30g butter, ghee or olive oil
1 leek, white part, finely sliced
1 large red capsicum, diced
10 free-range or organic eggs, whisked
80g feta cheese, approx.
2 tbsp per omelette
Sea salt & freshly ground black pepper, to taste
Micro-herbs or leafy greens, to serve

In a small pan, melt the butter or heat the oil.

Add a quarter of the leek and capsicum and cook for one min over a low heat, stirring well.

Pour over a quarter of the whisked egg and swirl the pan to make sure the vegetables are covered.

Season to taste.
