Simple stir-fries

Stir-frying is a technique where ingredients are cooked in oil at very high temperatures. The method began in China, then spread throughout Asia and now has taken over the world. Originally stir-frying was done in a wok, although now, in the West, we tend to also do it in a frying pan and still call it stir-fry. The great appeal of stir-frying is its simplicity and versatility. The ingredients you combine are only limited by your imagination. For those times when you need a simple nutritious meal, try these delicious and nutritious stir-fry recipes: Asian salmon with tamari and ginger; beef stir-fry with peaches; satay tofu and vegetables; Mongolian tofu; Mediterranean vegetable stir-fry; crispy beef with bamboo shoots; chicken and capsicum medley; or chilli, beef and broccolini.

Asian Salmon with Tamari & Ginger

This fall-apart, simple stir-fried salmon should be on high rotation in your mid-week meal planners. I’m using tamari instead of soy for easier digestion.

Serves: 2

Marinade

2 tbsp tamari 1 tbsp sesame oil 1 tbsp crushed fresh ginger 2 cloves garlic Pinch chilli flakes
2 fillets salmon, cut into large pieces Sesame oil

To Serve

1 bunch fresh coriander, leaves picked
1 bunch spring onions, finely sliced
1 bunch mint, leaves picked 1 red capsicum, finely sliced
Bean sprouts

Mix marinade ingredients in a small bowl then marinate salmon in a dish for 10 mins.

When ready, heat the sesame oil
