Breakfast

Ingredients:
3 large flour tortillas
3 large eggs
1/2 cup shredded cheddar cheese
1/4 cup diced bell peppers
Salt and pepper to taste
Butter or oil for cooking
Instructions:
Heat a skillet over medium heat and add a small amount of butter or oil.
Crack each egg into the skillet and scramble them as they cook.
Once the eggs are cooked, season them with salt and pepper.
Lay out the flour tortillas on a clean surface.
Sprinkle shredded cheddar cheese evenly over one half of each tortilla.
Divide the scrambled eggs and diced bell peppers among the tortillas, placing them on top of the cheese.
Fold the other half of the tortilla over the fillings to create a half-moon shape.
Press the tortillas down gently with a spatula to help the cheese melt and the quesadillas stick together.
Cook the quesadillas for about 2-3 minutes on each side, or until they are golden brown and the cheese is melted.
Remove the quesadillas from the skillet and let them cool slightly before cutting into wedges.
Coconut Yogurt Parfait
Ingredients:
2 cups coconut yogurt (dairy or plant-based)
1 cup granola
1 cup mixed berries (such as strawberries, blueberries, raspberries)
1/4 cup shredded coconut
Honey or maple syrup for drizzling (optional)

In serving glasses or bowls, start by layering a spoonful of coconut yogurt at the bottom.
Add a layer of granola over the yogurt.
Follow with a layer of mixed berries on top of the granola.
Sprinkle shredded coconut over the berries.
Repeat the layers until the glasses are filled, finishing with a dollop of coconut yogurt on top.
If desired, drizzle honey or maple syrup over the top for added sweetness.
Serve the Coconut Yogurt Parfait immediately as a delicious and tropical-inspired breakfast or snack.
Banana Nut Overnight Oats
Ingredients:
1 cup rolled oats
1 cup milk (dairy or plant-based)
1 ripe banana, mashed
1/4 cup chopped nuts (such as walnuts or almonds)
1 tablespoon honey or maple syrup
1/2 teaspoon vanilla extract
Instructions:
In a jar or container, combine the rolled oats and milk.
Add the mashed ripe banana, chopped nuts, honey or maple syrup, and vanilla extract.
Stir well to make sure all the ingredients are evenly mixed.
Cover the jar or container with a lid and refrigerate it overnight or for at least 4 hours.
In the morning, give the Banana Nut Overnight Oats a good stir.
If the oats are too thick, you can add a splash of milk to achieve your desired consistency.
Serve the Overnight Oats cold as a convenient and nutritious breakfast.
Smoked Salmon Bagel
Ingredients:
2 bagels, sliced and toasted
2 ounces smoked salmon
1/4 cup cream cheese
1/8 red onion, thinly sliced
Capers for garnish
Fresh dill for garnish
Lemon wedges for serving
Instructions:
Spread a generous layer of cream cheese onto each toasted bagel half.
Lay a few slices of smoked salmon on top of the cream cheese on each bagel half.
Arrange thin slices of red onion over the smoked salmon.
Garnish with capers and fresh dill.
Serve the Smoked Salmon Bagels with lemon wedges on the side for squeezing over the salmon.
Chocolate Banana Smoothie
Ingredients:
2 ripe bananas
2 cups milk (dairy or plant-based)
2 tablespoons cocoa powder
2 tablespoons honey or maple syrup
1/2 teaspoon vanilla extract
Ice cubes

In a blender, combine the ripe bananas, milk, cocoa powder, honey or maple syrup, and vanilla extract.
Add a few ice cubes to the blender to make the smoothie cold and refreshing.
