Salads

PEA SALAD

by Mary Jane Mathis

INGREDIENTS

1 (16 ounce) package frozen green peas

½ cup chopped almonds

½ cup chopped green onions

½ cup crumbled feta cheese or

½ cup shredded Cheddar cheese

3/4 cup mayonnaise

2 tablespoons balsamic vinegar or apple cider black pepper to taste

1 ½ teaspoons prepared mustard

2 hard-cooked eggs, chopped

3 tablespoons sweet pickle relish

Think I would use canned peas for this. The apple cider I would use instead of the balsamic.

DIRECTIONS

Place peas in a colander, and run warm water over them until they are thawed. Place in a large bowl.

Toast almonds in a skillet over medium heat. Then combine with peas.

Stir in onions, feta cheese, and mayonnaise. Mix in balsamic vinegar, and season with pepper. Cover, and refrigerator.

Cracker Salad

INGREDIENTS

12 ounces saltine crackers

3 tomatoes - peeled, seeded and diced

1 onion, finely diced

1 green bell pepper, diced

1 (8 ounce) package sharp Cheddar cheese, shredded

1 1/4 cup mayonnaise, or as needed or if needed salt and ground black pepper to taste

1 hard-cooked egg, chopped optional

DIRECTIONS

Break saltines in a bowl, add tomatoes, onion, green bell pepper, cheddar cheese and moisten with mayonnaise. Add salt and pepper to taste. Chill before serving.

add the crackers just before serving.

use one sleeve of saltines, 2 roma tomatoes chopped removing the seeds, 3 green onions chopped and 2 hard boiled eggs diced. Right before I serve it, I mix all those ingredients with a cup and a half of mayonnaise. This is one of my husband's favorite side dishes, especially with grilled chicken or grilled pork tenderloin. Does not keep-too soggy!

Chocolate Mug Cake

Sounds just right for one person. Saves baking a whole cake then throwing most of it out.

Just tried this and it is delicious! I did add the chocolate chips and this would be great with ice cream
