1 cup granulated stevia
3 free-range eggs
2¼ cups self-raising flour
¼ tsp salt
¾ tsp baking soda
1½ tsp ground cinnamon
2 cups mashed ripe banana (see tip)
2 tsp vanilla extract
¾ cup sour cream
1 cup walnut halves, roasted, chopped
¼ cup boiling water
3 tsp espresso coffee granules
