Introduction
Thank you for taking the time to read my book. When I was diagnosed with Diabetes in 2019. I thought it was very important to change my eating habits so I could live.

Chocolate Delight
2-8oz cream cheese
2-8oz unsweetened Cool Whip
2 c monk fruit sugar
1 pkg of pecan pieces
Milk
2 large pkg of chocolate instant pudding
2 sticks of unsalted butter
2 cups flour (all-purpose)
Crust: Milk butter in a baking pan. Add butter to 2 cups of flour, 1 c sugar, and pecans. Mix well and press in the bottom of the pan. Pre-bake for 10 minutes
Pudding: Fix pudding according to the pudding box.
Topping: Mix cool whip with 1 c sugar and cream cheese.
Separate and save half of the topping
Assemble in pan. On top of the crust, add a layer of the cool whip topping. Mix ½ of cw topping to mix with the pudding. Layer and then add cool whip topping on the top, making the third layer.
Chocolate Cake
9 Eggs, separated, room temp.
1 T Rum, dark
1/4 t Extract, vanilla
1/4 t Cream of Tartar
8 T monk fruit sugar
12 oz Chocolate, semi-sweet, --, Melted
6 T Butter, unsalted, melted
3 T Cornstarch
2 T Cocoa, unsweetened
2 1/2 oz Amaretti (about 10 Italian -- macaroons), finely --,
Crust For Cake:
Preheat oven to 375 F.
Butter and flour 3 9-inch round cake pans.
Beat yolks until they are pale yellow and form a ribbon when the beaters are lifted for about 5 minutes.
