Don and Kathy were married for over twenty years before the pains and personality changes began. Blood tests indicated a rise in the liver enzymes, and a liver biopsy revealed that Don, who never drank, had nonalcoholic cirrhosis of the liver. As devastating as this news was, it did not explain the constant pain that seemed to worsen with each meal. After many doctor's appointments and non-diagnoses, the test for gluten-intolerance was done, and long story short, Don was officially diagnosed with Celiac Sprue and was told to not have one speck of gluten in his diet from that moment on or he would have an esophageal bleed that he wouldn't recover from within the next two months. The world of gluten-free meal preparation became the norm, and it wasn't long before friends and family members started asking for help too. Hence, this cookbook came about out of necessity and made it so that the whole family could enjoy every meal without having to make special dishes just for her husband alone.

Why another cookbook, you ask?
In high school, my dream was to attend college, receive a degree in home economics, and one day work for the Betty Crocker company, testing muffins! In January of 2008, my high school dream career became a reality in a way I never would have imagined. And so, the tale begins…
After over twenty-five years of marriage to a wonderful man, I began to become concerned with his constant complaints of unexplainable pains. We had several doctor's appointments and blood tests with no defining reason given until finally, one doctor told us that his liver enzymes were on the rise. A liver biopsy was performed, and non-alcoholic cirrhosis of the liver was the diagnosis but with no explanation as to the cause. A few more years went by, and now my dear, happy, loving husband was alienating all of his friends, family, and coworkers due to nasty comments and hurtful words, sudden and constant mood swings, suicidal thoughts, and the pains were getting worse with the liver enzymes on the rise, and the explanations still were not there.
One day, his brother told him about some research he had been doing regarding ADHD and how he had read about the effect of gluten on our organs and brain. He urged Don to ask the doctors about the possibility of having an intolerance to gluten.
The appointment was made, and although the doctor felt it was highly improbable
since my husband did not fit the average thin profile of gluten intolerance, the tests were performed.
Long story short: My husband was diagnosed with Celiac Sprue and was told he had perhaps two months to live if we did not immediately cut every speck of gluten from his diet. I did not have to think twice about what to do. However, the task of changing how I cooked and what he could eat seemed a daunting proposition. My dream career became a reality. Not testing muffins for a large corporation, but for people who meant the world to me—my family.
Our home became a gluten-free home immediately, and within a few weeks, the man I had loved and married began to reemerge!
His countenance was happier, and his mood swings were lessening in severity. Yes, he still had pain as the years of undiagnosed gluten poisoning had damaged his liver and small intestines along with creating esophageal varices; but over time, the personality changes happened less
