You can't really expect to be a true grill expert without a proper fire. Even if you use a gas grill, this is a valuable skill that will help you become a better griller.
With a charcoal grill, you may build a fire anywhere except under the food you're cooking, resulting in a more equal heat.
Another factor to consider while constructing a fire is the use of hardwood.
Slow-burning wood chips will give your dish a smokey flavor. If you're going to add wood chips to your fire, you'll need a location to put them. You can use a firebox or wrap the moistened wood chips in foil on a gas grill.
