    CURATIVE PROPERTIES OF MILK,

    CURD, HONEY, SUGARCANE

    MILK (DOODH)

    Milk is generally obtained from cow, buffalo, goat, sheep and mare but the first two animals’ milk is most commonly consumed. Milk is nearly a perfect food, having in suitable proportions, carbohydrates, fats, proteins, minerals, vitamins and other nutrients, which are said to be necessary to sustain and maintain good health. The protein found in milk, contains all the essential amino acids with high biological values that build up the body and repair broken cells.

    FOOD VALUE

    Moisture Water-87.5%, Protein-3.2%, Fat-4.1%, Carbohydrates-4.4%, Calcium-120 mg, lron-0.2 mg, Phosphorus-90 mg, other minerals-0.8%, and small amounts of Vitamins B-Complex, K and P. Calorific Value-67 (per 100 gms of edible portion of milk.)

    The fats, proteins and carbohydrates contained in milk are easily and quickly digested; it takes not more than half an-hour for milk to be digested whereas other liquids take much longer time. Almost as soon as it reaches the stomach, milk starts to curdle as its organic salts and water contents are immediately absorbed by the intestines. Milk is suitable for all age groups, from infancy to old age. Milk, particularly the cow’s milk, is the only substitute for mother’s milk. It is equally beneficial for nursing and expectant mothers, infants, toddlers, growing children as it is for invalids, bed-ridden persons and old people. Being a wholesome and well-balanced victual, milk promotes long life, dispels exhaustion and run-down condition, builds up energy, improves memory and sustains and nurtures body. Milk, being an essential part of our diet, is consumed in many other forms, no less delicious, like cheese, yoghurt, whey, khoya, butter, ghee, sweet-meats, dessert and various other delicacies in bakery and confectionery as also in some medical preparations.

    Milk is highly beneficial in disorders which includes under weight problem, hyperacidity, insomnia, skin disorders of various origins and respiratory disorders. One litre of milk, in divided doses, will suffice to meet a person’s daily requirement for all nutrients. It is also a potent means for enhancing beauty of face, hair, hands, feet or rather skin as a whole.

    Milk with cornflakes or porridge or banana makes an excellent breakfast and wholesome food. Those who suffer from constipation or insomnia should take a glassful of milk at bed-time. It also keeps blood pressure within normal confines. It also lowers serum cholesterol. For diabetics and most alcoholics, milk is an ideal and remedial drink.

    CURD (YOGHURT, DADHI, DAHI)

    Curd is a fermented form of milk. But it has more Vitamin B complex than milk. Cow’s yoghurt/curd is, by far considered the finest, as it is easily digestible. It is specifically known to help in heart ailments, senile state and in preventing and delaying degeneration of body. It purifies blood, keeps digestive system healthy, renders a complexion which is fair, lustrous and moisturised.

    Curd prepared with buffalo’s milk is hard to digest and causes an increase in phlegm and wind. It is also richer in fats. But, it has its own medicinal benefits. Although a mild laxative, in case of diarrhoea and dysentery, it is a boon if eaten with rice. It keeps the mind alert, protects mucus lining of the stomach,. Rub curd on body before bath to dispel body odour and make your skin glow and shine. To get rid of (dry) itching on the skin (a problem very common in winter due to cold and dry winds), rub mustard oil mixed with curd (in the ratio of 1:10 Ratio) on the affected parts. It is a rejuvenator of all the systems of the entire body, as it destroys toxins in the body, improves digestion and as a result improves general well-being of the body.

    It has been observed that persons who include curd in their daily diet, are healthier, more alert, have soft and glowing skin, better bowel movement in comparison to those who don’t consume curd. Mixing black salt, cumin powder, black pepper powder with milk acts as an appetiser.

    Buttermilk is cooling, lighter, more easily digestible, and also works as a tonic. It is a natural laxative and stimulator of colon. Regular and plentiful use of butter milk, by all age groups (both by the young and the old) promotes growth, longevity, corrects disorders of liver, stomach, colon and, above all, gives a feeling of general betterment of the body and brain. Diabetics can also use both curd and whey. Taking onion slices in curd, with salt to taste will stop nausea and vomiting tendency. Cheese is called ‘whey’ which contains milk-sugar, minerals and vitamins. Whey is useful in loose motions. It is a digestive tonic of very high food value as it cures dysentery and jaundice. While Curd and buttermilk should be avoided during rainy days, whey can be used all the year round. During summer cucumber raita (grated cucumber in curd with seasoning) helps beat heat. Chiwda, which is hand-beaten un-puffed rice, (dip in water and use when softened) mixed with curd soothes and cools stomach, cures loose motions. It is, in fact, a complete diet. Banana (cut into pieces), curd and honey mixed together, makes an excellent food tonic.
