    Prawn Banh Mi

    A Vietnamese sandwich that’s French-inspired.

    Ingredients

    −  1 large carrot, shredded

    −  1 stalk celery, chopped

    −  2 scallions, chopped

    −  ¼ cup of rice vinegar

    −  ⅓ cup of chopped fresh cilantro

    −  3 tablespoons of low-fat mayonnaise

    −  3 tablespoons of low-fat plain yogurt

    −  1 tablespoon of lime juice

    −  ⅛ teaspoon of cayenne pepper

    −  3 (12 inch) French baguettes, sliced in two

    −  1 pound of frozen cooked prawns, thawed and tails discarded

    −  18 thin slices of cucumber

    Serving size

    −  6 servings

    Directions

    Combine celery, scallions, and carrot in bowl

    Add in vinegar and toss vegetable thoroughly

    Keep aside and let marinate

    Stir mayonnaise, cilantro, lime juice, cayenne pepper and yogurt in bowl

    Spread about 2 tbs of mayonnaise sauce on the bottom piece of baguettes

    Pick vegetables using a slotted spoon and lay on baguette pieces, discarding vinegar

    Mix prawns in leftover mayonnaise sauce and arrange over vegetable layer

    Top up with cucumber slices and baguettes to form sandwich

    Preparation time

    −  20 minutes

    Bitter Melon Soup

    A tasty Vietnamese style bitter melon and pork recipe.

    Ingredients

    −  ½ pound of ground pork

    −  2 tablespoons of soy sauce

    −  ⅛ teaspoon of garlic powder

    −  ⅛ teaspoon of ground black pepper

    −  1 bitter melon

    −  4 cups of water

    −  1 teaspoon or soy sauce, or to taste

    −  1 teaspoon or fish sauce, or to taste

    −  1 green onion, sliced

    Serving size

    −  3 servings

    Directions

    Combine pork, 2 tbs of soy sauce, pepper, and garlic in a bowl

    Seal bowl with plastic wrap and freeze for 30 minutes to 1 hour

    Slice bitter melon, and discard spongy, seed interior

    Fill bitter melon rings with pork mix, until fully stuffed

    Make same sized meatballs with leftover pork

    Drop meatballs and stuffed rings in boiling water in a saucepan
