    Author’s Introduction

    I have been making chocolates for nearly two decades. From the start I was self-taught. Everything I learned, I learned through trial and error.

    I used what I learned to start my own chocolate company. I also taught several classes on chocolate-making. When I decided to stop making chocolates commercially, I never stopped making them for my friends and family. In fact it is still something everyone looks forward to receiving at holidays and special occasions.

    The thing I often hear from those who delight in my chocolate creations is, I could never make chocolates like you make them.

    The fact is making chocolates isn’t brain surgery. There is no reason to feel intimidated. I’ve learned over the years that the simpler the candy is the more impressed people are by it.

    So if you’ve ever said to yourself, I can never make chocolates like an expert Chocolatier, then this book is definitely for you.

    This cookbook will take all the guesswork and fear out of making candy and baking delicious treats. No recipe has more than five ingredients. The idea is that five is a magic number, any more than that and a recipe might seem daunting and you might be reluctant to try it. Yet once you’ve mastered this cookbook you can tackle more complex recipes, or enhance the recipes within the book, adding your own special touch, thereby releasing all of your trepidation.

    My advice is to have fun with the recipes. After your friends and family will taste your sweet creations they too will believe they would never be able to make chocolates like you can make chocolates.

    It will be our secret.

    Making chocolates is really not difficult, but there are a few things to know before getting started.

    What type of chocolate should you use?

    There are so many chocolates to use for candy-making and baking that it can boggle one’s mind. Certain chocolates are better for certain recipes, and everyone has their preferences.
