    The cream of leek already intrigued me for a while, I saw several pairs with shrimp or salmon and it seemed like a great mix of flavour, so I wanted to try and this is the result pleasant.

    Ingredients for 4 people :

    2 leeks

    300 grams of potatoes

    500 ml of broth vegetable

    8 shrimp

    Extra virgin olive oil

    Salt

    Preparation time: 15 minutes

    Cooking time: 30 minutes

    Total Time: 45 min

    How to make creamed leeks

    Clean the leeks by removing the bottom by cutting 2 or 3 mm above the roots and above the green stem.

    Then rinse under running water to remove any remaining earth and cut into rounds.

    Wash and peel the potatoes and cut into chunks.

    Put a little oil in a saucepan, then add the leeks and potatoes, stir and cook for a few minutes.

    Prepare the broth (I do it with my homemade vegetable stock cube)

    Pour the hot broth over the vegetables to cover them, cover with a lid and cook for about 30 minutes.

    Season with salt and then with an immersion blender, blend everything, adding more broth if the soup becomes too thick Clean the prawns by removing the head and shell.

    Stir fry in a pan with a little olive oil, salt and a pinch of ginger.

    Serve the soup with leeks accompanying it with shrimp and croutons (A small piece of fried or toasted bread served with soup or used as a garnish).
