    My name is Enrico, I am pastry chef and cook. I work with the food from over twenty years and I begun to cook my gluten-free recipes for three years now. I thank my celiac wife that has opened me the mind to the gluten-free world.

    The recipes in this book are easy to perform, a surprise of perfumes and flavors, because eating gluten-free is eating healthy with genuine products, highly digestible.

    The recipes that I propose are all prepared by me and tasted by me, my wife, our relatives, and the friends…adventurers of the good food !

    The Advice of Enrico

    About hygiene...

    Obvious, but very important in the kitchen, it is to wash your hands often, especially when you touch foods like eggs, raw meat, cooked meat, fish and hands are sticky of dough. When clean the nose or it touches the money... And when you go to the bathroom!

    Wash and clean the table and work equipments, wash their hands when we touch products with gluten.

    Preserve products in dry fresh environment and in the refrigerator.

    Select fresh products.

    With the summer season, to leaven less doughs. Example: 2 hours winter = 1 hour summer.

    Check on the wrappings of the products and the flours, the absence of gluten.

    Check the due date of the alimentary products.
