    For the Gluten-Free Pizza Crust:

    2 1/2 cups gluten-free flour blend

1 teaspoon xanthan gum (if your flour blend doesn't include it)

    1 tablespoon sugar

    1 teaspoon salt

    1 tablespoon active dry yeast

    1 cup warm water

    2 tablespoons olive oil

    1 teaspoon apple cider vinegar

    For the Toppings:

2 medium apples, thinly sliced (use a sweet variety like Honeycrisp or Fuji)

    1 cup shredded Gouda cheese

    1/2 cup caramelized onions

    1/4 cup chopped walnuts

    2 tablespoons honey

    1 teaspoon fresh thyme leaves

Salt and black pepper to taste

    Prepare the Gluten-Free Pizza Crust:

In a small bowl, combine warm water and sugar. Stir until the sugar is dissolved, then sprinkle the yeast over the water. Let it sit for about 5- 10 minutes until it becomes frothy.

In a large mixing bowl, combine the gluten-free flour, xanthan gum (if needed), and salt.

Add the yeast mixture, olive oil, and apple cider vinegar to the dry ingredients. Mix until a dough forms.

Knead the dough on a surface dusted with gluten-free flour until it's smooth.

Roll out the dough into your desired pizza shape on a piece of parchment paper.

    Prebake the Crust:

Preheat your oven to 425°F (220°C).

Place the rolled-out pizza crust (with parchment paper) on a pizza stone or baking sheet.

Bake the crust for about 10 minutes until it's set but not fully cooked.

Assemble the Apple and Gouda Pizza:

Remove the partially baked crust from the oven.

Spread a layer of shredded Gouda cheese over the crust.

Arrange thinly sliced apples evenly over the cheese.

Distribute caramelized onions and chopped walnuts over the apples.

    Drizzle with Honey and Season:

    Drizzle honey over the toppings.

Season with salt and black pepper to taste.

    Bake to Perfection:

Place the pizza back in the oven and bake for an additional 12-15 minutes or until the crust is golden, and the toppings are bubbly and slightly browned.

    Finish and Garnish:

Remove the pizza from the oven and let it cool for a few minutes.

Sprinkle fresh thyme leaves over the hot pizza.

    Slice and Serve:

Slice the Apple and Gouda Gluten-Free Pizza into wedges.

Serve immediately and savor the sweet and savory combination of apples, Gouda, and caramelized onions on your gluten-free crust!
