    Italian Apple Olive Oil Cake

    Apple Olive Oil Cake is a rustic cake with apple bits, raisins, and just the correct number of spices. This no-fuss olive oil cake will delight you.

    Time to Prepare: 20 minutes

    Time to cook : 45 minutes

    Tot Time: 1 hour and 5 minutes

    Ingredients

    2 peeled and finely sliced Gala apples

    3 cups orange juice for the apples to soak in sifted flour (all-purpose)

    ½ teaspoon powdered cinnamon

    ½ tsp powdered nutmeg

    1 tbsp baking soda

    1 teaspoon of baking soda

    1 pound of sugar

    1 cup extra virgin olive oil from Private Reserve

    2 large eggs

    1 cup gold raisins, immersed for 15 minutes in warm water and then drained

    Dust in confectioner's sugar.

    Instructions

    1)  Preheat the oven to 350 deg.

    2)  Toss the sliced apples in a bowl of only enough orange juice to toss and cover the apples, preventing browning.

    3)  Sift together the rice, cinnamon, nutmeg, baking powder, and baking soda in a big mixing cup. Set aside for the time being.

    4)  Add sugar and extra virgin olive oil to the bowl of a stand mixer equipped with a whisk. Mix on low for 2 minutes, or until it is well mixed.

    5)  While the mixer is running, add the eggs one at a time and mix for another 2 minutes, or until the mixture has doubled in volume (it should be thicker but still runny)

    6)  Fill the well with the wet mixture (the sugar and olive oil mixture).

    7)  In the large mixing bowl with the dry ingredients, make a well in the flour mixture's middle.

    8)  Stir with a wooden spoon until just combined; the batter will be thick (do not add anything to loosen it).

    Spaghetti Tomato-Basil Sauce With Blackened Chicken

    Tomatoes, basil, garlic, and citrus are just a few of the vivid Mediterranean flavors in this simple chicken spaghetti recipe. Serve it with your favorite salad for dinner.

    Ingredients

    For Chicken:

    1.5-pound boneless chicken breast pieces

    salt kosher

    ¾ of a teaspoon of black pepper

    1 teaspoon oregano, dried

    ½ tsp coriander powder

    ½ teaspoon paprika

    ¼ tsp nutmeg powder

    olive oil (extra virgin) (see our olive oil options here)

    1 lemon, ¼ cup water

    For Pasta:

    1 pound of spaghetti

    ½ tsp red pepper flakes, crushed

    olive oil (extra virgin) (see our olive oil options here)

    2.5-pound grape or cherry tomatoes, peeled and halved (you can leave some whole)

    7 garlic cloves, minced 7-8 green onions, trimmed and finely chopped (both white and green parts)

    ½ cup white wine, dry

    1 lemon, freshly squeezed lemon juice,

    salt and pepper to taste

    20 large basil leaves, torn into small pieces

    Parmesan cheese, freshly grated

    2 tbsp pine nuts, toasted, for garnish (optional)

    Instructions

    1)  Preheat the oven to 400 degrees Fahrenheit.

    2)  After patting chicken breasts dry, season with kosher salt and black pepper. In a small cup, combine the oregano, coriander, paprika, and nutmeg.

    3)  Brush the chicken right over the outside of the breasts with the seasoning mixture.

    4)  2 tbsp extra virgin olive oil, heated in an oven-safe skillet until shimmering but not smoking Turn heat off after adding the chicken and browning it thoroughly on both sides (about 4 to 5 minutes total). ¼ cup water and a squeeze of lemon juice.

    5)  Preheat oven to 400 degrees Fahrenheit. Preheat the oven to 350°F. Put the chicken in the oven.

    6)  Preheat oven to 200°F and bake, turning once, for 20 to 25 minutes. (The chicken is finished when the thickest portion of its internal temperature exceeds 165 degrees F.)

    7)  Cook the spaghetti according to the package directions while the chicken is baking. In a pot of boiling water with a pinch of salt, mine took about 9 minutes. Using a large colander, drain the water. Set aside for a moment.

    8)  ½ cup olive oil, heated in a large heavy skillet Crushed red pepper flakes, tomatoes, garlic, and chopped green onions should all be added at this point. Season with kosher salt and freshly cracked black pepper.

    9)  Cook on medium-high for 5–7 minutes. Toss in the white wine and lemon juice now.

    10) After seven minutes, lower the heat and keep the pot covered for five, then go to a low setting for five more, then switch it off, then allow it to cool entirely before shutting off the heat for another ten minutes.

    11) After the water has evaporates, simmer the tomatoes for another 10 minutes.

    12) Stir in the cooked spaghetti with a fork until everything is well combined. Toss in the basil leaves, Parmigiano-Reggiano, and pine nuts once the pasta has heated through (if you choose).

    13) Place the baked chicken breasts on top of the spaghetti in serving bowls. Have fun!
