    Lamb Tagine In Morocco

    Tagine is the name given to a Moroccan stew served in an earthenware dish.

    This slow cooker recipe for lamb, sweet potatoes, dates, and olives is delectable.

    Serving Size: 1 Cup Lamb Mixture And 1/3 Cup Couscous

    Ingredients

    ½ tsp ginger, powdered

    ½tsp cumin powder

    ¼ teaspoon turmeric powder

    ½ teaspoon salt

    ¼ tsp. cinnamon powder

    ½ pound boneless lamb shoulder or stew beef, sliced into 1-inch chunks

    1½ cup sweet potato, diced and coarsely sliced

    2 large number of carrots, peeled and cut into 1-inch sections

    1 plum tomato, medium

    ¼ cup pitted dates

    ¼ cup green olives, halved

    1 medium onion, diced

    2 tbsp. tapioca starch

    2 tbsp. lemon peel, finely chopped

    ½ tsp lemon juice

    ½ tsp lemon juice ½ tsp

    lemon juice, 1 tablespoon

    honey, 1 tablespoon

    1 can chicken broth, lowered in sodium (14.5 ounces)

    2 garlic cloves, minced

    ¼ cup sliced almonds, toasted

    2 cups hot, cooked whole wheat couscous

    Instructions

    1)  Ginger, cumin, salt, turmeric, and cinnamon can be combined in a big mixing cup. Toss the lamb in the spice mixture.

    2)  Lamb, sweet potato, tomato, carrots, onion, dates, olives, tapioca, lemon peel, lemon juice, honey, and garlic can all be included in a 3 1/2 to 4-quart slow cooker (see Tip). Over all, pour the broth.

    3)  You can cook this on low for eight to ten hours, or in a high heat setting for four to five hours.

    4)  Toss with almonds and serve over couscous.

    Tips:

    1)  To toast nuts, spread them out on parchment paper in a shallow baking tray. Bake for 5 to 10 minutes, or until golden, at 350 degrees F, shaking pan once or twice.

    2)  Line the slow cooker with a reversible slow cooker liner for quick cleaning. As instructed in the recipe, combine the ingredients. When the dish is done cooking, remove the food from the slow cooker and discard the liner. Lifting or transporting the plastic lining with food inside is not recommended.

    Soup Of Moroccan-Inspired Chicken And Sweet Potatoes.

    This nutritious chicken soup has a bold Moroccan flavor thanks to sweet potatoes, cumin, cinnamon, cayenne pepper, and a splash of fiery harissa.

    We boil bone-in chicken breasts in store-bought broth to get a homemade stock flavor before adding the soup ingredients.

    Ingredients

    2 tbsp extra-virgin olive oil

    2 big garlic cloves, minced

    1 cup chopped onion

    1½ teaspoons cumin powder

    ½ teaspoon cinnamon powder

    cayenne pepper (1/4 teaspoon)

    8 cups chicken broth (low sodium)

    2 pounds skinless bone-in chicken breasts

    3 cups sweet potato, diced

    2 cups red bell pepper, diced

    2 cups fresh or frozen green beans (1-inch pieces) (thawed)

    1 rinsed 15-ounce can chickpeas

    1¼ tbsp. salt

    ½ teaspoon powder, ground

    1 tbsp. harissa (or to taste)

    Instructions

    1)  In a big pot over medium pressure, heat the liquid. Cook, stirring regularly, until the onion and garlic are softened, around 2 to 3 minutes.

    2)  Cook, stirring constantly, for 1 minute after adding cumin, cinnamon, and cayenne. Add the chicken and the broth to the pot. Increase the fire to strong and carry to a boil, covered.

    3)  Uncover and cook for 20 to 22 minutes, or until an instant-read thermometer inserted into the thickest part of the chicken without reaching bone registers 165 degrees F. As the chicken cooks, skim some foam from the surface. Place the chicken on a freshly cleaned cutting board. Remove the meat from the bones and shred it until it's safe to
