Spaghetti With Chicken Meatballs And Tomato Sauce
Ingredients:
Sixteen fully cooked refrigerated Italian-style chicken meatballs
Whole-wheat spaghetti, eight ounces
Ripe tomatoes, four cups - chopped
Parmesan cheese, a quarter cup – finely grated
Garlic, three cloves - minced
Extra-virgin olive oil, three tablespoons - divided
Fresh basil, one cup - chopped plus more for garnish
Instructions:
A big pot of water should be brought to a boil. Cook the pasta as directed on the packet. Drain.
In a medium mixing dish, add tomatoes, basil, garlic, and 2 tablespoons oil.
In a large pan, heat the remaining 1 tablespoon oil over medium-high heat.
Cook, tossing regularly, until the meatballs begin to brown, 3 to 5 minutes.
Remove from the heat and stir in the tomato mixture to coat.
Serve the meatballs and sauce over pasta, topped with Parmesan cheese.
If desired, top with additional basil.

Linguine Alle Vongole
Ingredients:
Whole clams, four (10 ounce) cans - with their juice
Whole peeled tomatoes, one can (28 ounce) - with their juice
Linguine, one (16 ounce) package - preferably whole-wheat
Extra-virgin olive oil, a quarter cup
Unsalted butter, two tablespoons
Garlic, eight cloves - minced
Scallions, six - sliced
Red pepper, one and a half teaspoons - crushed
Dry white wine, three quarters cups
Fresh parsley, three quarters cups - chopped
Ground pepper, half teaspoon
Instructions:
In a large saucepan, heat the oil and butter over medium-high heat.
Cook, turning regularly, until garlic and onions are tender, 2 to 4 minutes.
Add the clams, tomatoes, and wine, along with their juices.
Bring the water to a boil.
Reduce heat to maintain a low simmer and cook, stirring regularly and breaking up the tomatoes, for 30 to 35 minutes, or until reduced by one-third.
Add the parsley, crushed red pepper, and salt and pepper to taste.
Cook for another 3 minutes, stirring occasionally.
Meanwhile, boil al dente pasta according to package guidelines. Drain.
Toss the spaghetti gently into the sauce.
